Orbit Noodles

Looped noodles served with star sauce and comet peas

Orbit Noodles are springy loops of grain pasta arranged around a dark savory sauce and bright green comet peas.

Shape

The noodles are stretched into long loops before boiling. When lifted, a properly cooked strand curls back toward the bowl instead of hanging straight, giving the dish its orbit name.

Star sauce

Star sauce is a dark, savory vegetable reduction dotted with pale herb crystals. The crystals dissolve slowly, so each bite becomes slightly brighter and more aromatic as the meal continues.

Preparation

Cooks boil the noodles under normal gravity, drain them, and turn them briefly in a low-gravity mixing bowl. Comet peas and cut orbit greens are added last to preserve their shape.
